JULIEN EL KHAL. Brazilian-Lebanese Executive Chef with 17+ years of expertise in Western, Oriental, Continental, and Mediterranean cuisines, leading operations in prestigious luxury hotels and restaurant groups across Europe and the Middle East.

El-Khal brings over 17 years of operational experience in luxury hotels to his current role in Fairmont Hotel Amman as an executive chef. Overseeing the production of new offerings he leads his culinary team to fulfill its maximum potential in the dining scene. With his experience in menu-engineering, food waste control, and sourcing local fresh ingredients amongst others, El-Khal implements sustainable cooking methods for a greener environment.

The Chef's mission goes along with the core values of Ambassadors of Taste for the Global Gastronomy® organization & guide, such us: "Achievement of a sustainable gastronomy","Cultural heritage preservation", "Environmental sustainability", "Humanitarian aid" and need for "Unity and peace" 

This official award is considered as the top honor for Chefs and other entities connected with high-end gastronomy, in the world.

Leading a dynamic and diverse team in one of the region’s most prestigious hotels allows me to not only showcase authentic flavors and time-honored techniques, but also to introduce international guests to the depth and soul of our cuisine crafted with intention, respect, and passion.

I believe food is a powerful cultural ambassador. I strive to create experiences that connect people to our stories and traditions, while ensuring that our practices support a sustainable future. From sourcing seasonal, local ingredients and reducing kitchen waste, to empowering local producers and championing ethical food systems, my kitchen is built on values that nourish both people and the planet.

Through global collaborations, culinary events, and educational initiatives, I aim to inspire a broader appreciation for Middle Eastern cuisine and to lead by example showing that excellence in hospitality can go hand in hand with cultural pride and environmental responsibility.

As a Brazilian-Lebanese chef, my vision is to bridge cultures through gastronomy, sharing the soul of my heritage while embracing the richness of global culinary traditions. I see food as a universal language that connects hearts, tells stories, and preserves identity.
My long-term mission is to build a culinary legacy that celebrates both the bold, diverse spirit of Brazil and the deep-rooted elegance of Lebanese cuisine. Through international collaborations, educational initiatives, and sustainable practices, I aim to inspire a new generation of chefs and diners to explore, respect, and fall in love with the world’s culinary heritage.
In the future, I envision creating spaces, whether restaurants, books, or culinary experiences, where tradition and innovation meet, where flavors spark curiosity, and where food becomes a bridge between continents.
